Vegan Apple Pie Milkshake

Ingredients

  • For the Apple Pie Filling:
  • 3 Granny Smith apples, core removed and cut into 1-inch cubes
  • 1/4 cup light brown sugar, packed
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • For the Milkshakes:
  • 1/2 cup Apple Pie Filling, chilled
  • 1 pint Ripple Vanilla Ice Cream
  • 1 1/2 cups Ripple Vanilla Milk
  • 2 tsp vanilla extract

Directions

  1. In a large saucepan add the apples, brown sugar, lemon zest and juice, cinnamon, nutmeg, and ginger.
  2. Cook, stirring constantly until apples are very soft and begin to break down, about 15 minutes.
  3. Remove from heat and place in a blender.
  4. Process until smooth then transfer to an airtight container and place in the fridge until chilled (Note: this recipe yields enough apple pie filling for two batches of milkshakes).
  5. Add 1/2 cup of the chilled apple pie filling to a blender. Add ice cream, milk, and vanilla extract.
  6. Blend to desired consistency.
  7. Divide between two glasses and top with an extra scoop of ice cream and a drizzle of caramel; serve immediately.
