Vegan Acai Chocolate Donuts

  • Makes: 8 donuts.

Ingredients

  • Wet Ingredients:
  • 2 flax eggs ( 2 tablespoons of flax meal + 5 tablespoons of hot water)
  • ⅓ cup of maple syrup
  • ½ + 1 ½ tbs of Ripple Acai Superfood Milk
  • 2 tablespoons of coconut oil melted
  • 1 teaspoon of vanilla
  •  

  • Dry Ingredients:
  • 1¼ cup of gluten-free baking flour mix
  • 3 tablespoons of cocoa powder
  • ⅛ teaspoon of sea salt flakes
  • 1 teaspoon of baking powder
  • ¼ teaspoon of baking soda
  • 3 tablespoons of mini dark chocolate chips
  •  

  • Acai Glaze:
  • ⅓ cup of coconut butter
  • 4-5 tablespoons of Ripple Acai Superfood Milk
  • 2 tablespoon of maple syrup or coconut nectar
  • dash of vanilla extract
  • 4-5 tablespoons of water to thin the mixture out
  • optional superfood powders to add color to the icing

Donut Directions

  1. Preheat oven to 350. Prepare the flax eggs using the flaxmeal and hot water. Set aside for about 5-10 minutes. Oil a donut pan with coconut oil.
  2. In a large bowl whisk together the dry ingredients leaving out the chocolate chips. Melt the coconut oil. Mix the wet ingredients together in a separate bowl on the flax eggs have absorbed the water and have thickened up. Slowly mix the wet ingredients into the dry ingredients. Stir in the chocolate chips.
  3. Add the mixture to a piping bag and pipe the donuts into the oiled donut pan.
  4. Bake for 8-10 minutes depending on how hot your oven gets.
  5. Once a toothpick or knife comes out clean then donuts are done.
  6. Let cool for about 5 minutes then remove the donuts from the pan and let them completely cool before icing them.

    Icing Directions

    1. Mix all of the icing ingredients together. Adjust the water if need be to thin the mixture out more to your desired consistency.
    2. If using superfood colors to dye your icing, pick the colors you want to divide the icing into separate bowls.
    3. Add the colors into one bowl little at a time and swirl them. Don’t add all of the icing at once. I like to add more when I need it so each donut looks a little different.
    4. Slowly roll the donut into the icing and let it sit to harden up.
    5. Top with toppings if you desire.
