Sweet Potato Waffles

  • Makes: 6-8 waffles.
  • Prep: 7 minutes.
  • Cook Time: 15 minutes.

Ingredients

  • Dry Ingredients:
  • 2 cups of all-purpose flour
  • ¼ tablespoons of coconut sugar
  • 1 ¼ teaspoon of baking powder
  • ½ teaspoon baking soda
  • ¼-½ teaspoon of pumpkin pie spice
  • ½ teaspoon sea salt
  •  

  • Wet Ingredients:
  • 2 teaspoons of vanilla extract
  • ¾ cups of sweet potato purée
  • ¼ cup of coconut oil or vegan butter melted + more to oil the waffle iron
  • 1 ½ cups of Ripple Turmeric Superfood Milk

Cake Directions

  1. Whisk together all of the dry ingredients.
  2. Melt the coconut oil or vegan butter.
  3. In a separate bowl mix together all of the wet ingredients and then combine the dry ingredients to the wet ingredients.
  4. Turn on your waffle iron and let it heat up.
  5. Let the mixture sit while the iron is heating up.
  6. Brush the top and bottom of the waffle iron with melted coconut or melted vegan butter.
  7. Add about 1/8th-¼ cup of batter to your waffle iron or more depending on the size of your waffle iron.
  8. Cook the waffles for until done. Even once the light goes off on the waffle iron, you can leave the waffles in a few more minutes so they are crispy on the outside. Enjoy with maple syrup, nut butter, and fresh fruit!
  9. If you have leftovers, these freeze well too. Wait until the waffles have fully cooled down and place them on a baking tray in the freezer until frozen. Then store in a reusable freezer bag or ziplock bag. Remove them and toast them in the toaster when ready to eat them. Best if used within 3 months.
