Vanilla Protein Pops

Ingredients

  • For the Cake Pops:
  • 3 Tbsp Almond Flour
  • ¼ cup Ripple Vanilla Protein Powder
  • 2 Tbsp Maple Syrup
  • 1 tsp Ginger
  • ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • ¼ tsp Ground Cloves
  • ¼ tsp Allspice
  • ¼ cup Maple Cashew Butter or Cashew Butter
  • 5 pitted Medjool Dates
  • 1 ½ Tbsp Ripple Vanilla Milk
  •  

  • For the Coating:
  • 1 ½ Tbsp Almond Flour
  • ¾ tsp Ginger
  • ½ tsp Cinnamon
  •  

  • For the Icing:
  • ½ cup of Non-Dairy Butter (We used Earth Balance)
  • 1 ½ tsp Vanilla Extract
  • 1 Tbsp Ripple Vanilla Milk
  • 2 ½ cup Powdered Sugar
  •

  • Cake Pop Sticks

Pancake Directions

  1. Place all cake pop ingredients into a food processor or high-powered blender and pulse until everything is combined and it forms a dough-like texture.
  2. In a bowl, combine cake pop coating ingredients and whisk together.
  3. Roll dough into balls between the palm of your hands, dip in coating bowl until covered and then roll between hands again. Place cake pop stick in each ball and arrange them on a plate to harden in the fridge or freezer.
  4. While the cake pops are hardening, gather ingredients to make the icing. Add softened non-dairy butter to a bowl and use a hand mixer on low for 45 seconds to whisk and fluff it. Add Vanilla and Ripple Vanilla Milk and mix again. Slowly mix in powdered sugar until it’s completely combined.
  5. Once cake pops are feeling more solid and cooled, ice them as desired. Enjoy immediately or store in fridge for up to a week.
