Spider Whoopie Pies

  • Prep Time: 10 Minutes
  • Cook Time: 10-12 minutes, plus 15 for icing and assembly
  • Total Time: 35-37 minutes
  • Servings: Makes 12-14 Whoopie Pies

Ingredients

  •  
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup applesauce
  • 2 tbsp neutral oil
  • 3/4 cup brown sugar
  • 1 1/2 tbsp coffee powder, optional
  • 1 tsp vanilla
  • 1/4 cup Ripple Chocolate Milk
  • Orange Cream Filling:
  • 1 cup vegan butter softened
  • 4 cups powdered sugar
  • 1/4 cup Ripple Original Milk
  • 2-3 drops orange food coloring
  • To decorate:
  • Pretzel sticks
  • Candy eyes
  •  

Directions

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt.
  3. 
In a large bowl, mix together the applesauce, oil, brown sugar, coffee powder, vanilla and Ripple Chocolate Milk. 

  4. Add the flour mixture to the wet ingredients and stir to combine. 

  5. Line a baking sheet with parchment paper.

  6. Working in batches, place the batter onto the sheet in 1-2 inch circles giving room between each one for their size to double. (They will retain their shape while expanding so try to make them as circular as possible).
  7. Bake for 8-10 minutes.
  8. Remove from the oven and move to a cooling rack then continue the process until all batter has been used.
  9. 
To make the filling, cream the butter until soft, about 1 minute.
  10. Add powdered sugar, Ripple Original Milk, vanilla and food coloring.
  11. Whip until light and fluffy.

  12. Assemble cookie sandwiches by piping filling onto underside of one whoopie pie and topping with another. Repeat with remaining cookies.
  13. 
Add a dot of icing to the backs of the candy eyes and stick to the whoopie pie.
  14. Stick one end of the pretzel sticks in the orange cream filling.
