Banana Bread French Toast

Ingredients

  • 4-6 slices of bread
  • 1 egg (For vegan, substitute with 1 tablespoon flax meal)
  • 1 cup Ripple Vanilla milk
  • ½ mashed ripe banana
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp coconut sugar or cane sugar
  • Coconut oil or butter for greasing pan
  • Toppings: banana slices, walnuts, maple syrup

Directions

  1. Add the egg, Ripple Vanilla milk, mashed banana, vanilla extract, cinnamon, and coconut sugar to a shallow bowl. Mix well until all ingredients are well incorporated.
  2. Heat a skillet or griddle on the stovetop to medium-low heat. Grease the skillet with a bit of coconut oil or butter.
  3. Dip a slice of bread into the batter, letting it soak on each side for a couple of seconds.
  4. Once both sides of the bread have been dipped, immediately place it on the hot griddle.
  5. Cook each side for about 3 minutes or until it is slightly crispy and brown.
  6. Repeat steps 3-5 until all of the slices of bread have been cooked.
  7. Add desired toppings and enjoy!
