Lemon Carrot Chia Muffins

Shredded carrots add flavor and nutrients to these citrusy muffins.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 1/4 cups Ripple Original
  • 2 tbsp chia seeds
  • 1 cup shredded carrots
  • 1/2 cup golden raisins
  • 1/4 cup vegetable oil
  • 1 tbsp finely grated lemon zest
  • 2 tbsp lemon juice

Directions

  1. Preheat oven to 375˚F. Whisk together flour, brown sugar, baking
    powder, baking soda, cinnamon and salt.
  2. In separate bowl, whisk together Ripple Original and chia seeds. Let stand for 10 minutes. Stir in carrots, raisins, oil, lemon zest and juice. Stir in flour mixture.
  3. Line 12 muffin cups with paper liners and grease liberally. Spoon batter evenly into muffin cups. Bake for about 20 minutes or until tester inserted into center comes out clean.

Tip

– Add chopped, toasted pecans if desired.
